Last week, I found a bunch of bananas in my kitchen that were completely black and almost “dying.” Usually, I would feel a bit sad seeing them like that, but these overripe bananas are actually perfect for baking.
I decided to make Baked Banana Donuts for the first time in a while.

To be honest, I used to make these quite often, but my daughter had stopped eating them as much lately, so I hadn’t made them for a long time. But this time? To my surprise, she ate four of them! It made me happy to see her enjoy this simple, natural sweetness again.
These donuts are very easy to make—just mash the bananas, mix the ingredients, and bake. Since the bananas are so ripe, they are sweet enough without adding any sugar.
Ingredients
- 3–4 ripe bananas
- 40ml oil
- 100ml soy milk
- A pinch of salt
- 150g flour (I like to use a 50/50 mix of all-purpose flour and oat flour for a rustic texture.)
- 2 tsp baking powder

Instructions
- Mash the bananas with a fork. It’s okay to leave some chunks; it makes the texture even better.
- Add the oil, soy milk, and salt, then stir everything together.
- Add the flour and baking powder. Gently fold them in until just combined.
- Pour the batter into your favorite donut molds and bake at 180°C (350°F) for about 25 to 30 minutes.

If they cool down, I usually pop them in the toaster for a bit. It makes the outside nice and crispy again, so I actually recommend trying them that way too.
The result is a soft, naturally sweet treat. It’s a gentle reminder that even something that looks like it’s “dying” can turn into a big smile on a child’s face.
