Quick Atsuage & Komatsuna Stir-Fry

Atsuage becomes so delicious when it’s pan-fried.
Today I found a nice, thick piece at the store, so this was an easy choice.

Just soy sauce and mirin.
Quick in the pan.
Simple, but very satisfying.


Ingredients

  • 1 pack atsuage (thick fried tofu)
  • 1 bunch komatsuna
  • 1–2 Tbsp sesame oil
  • 2 king oyster mushroom (or any mushrooms you like)
  • 1–2 Tbsp soy sauce
  • 1 Tbsp mirin
  • Sesame seeds – as much as you like

Instructions

(1) Cut the komatsuna into about 3 cm pieces.
Cut the atsuage into bite-size pieces.
Slice the king oyster mushroom into rounds.

(2) Heat sesame oil in a frying pan.
Cook the atsuage until nicely browned.

(3) Add the king oyster mushroom and stir-fry.

(4) Add the komatsuna.Stir-fry briefly.

(5) Add mirin and soy sauce.
Toss everything together until well coated.

I also threw in some mizuna that had gone a bit limp in the fridge. 

It’s the kind of dish that makes rice disappear quickly.
My kids love this flavor too.
