Easy Vegan Oat & Maple Cocoa Cookies for Valentine’s Day

Uncategorized

Today, while my son was napping, my daughter and I made Valentine’s chocolate cookies — a little late, but still special.

She just turned three, and she can do so many things now. She loves helping in the kitchen. Measuring, mixing, cutting shapes… sometimes more flour ends up on the table than in the bowl, but that’s part of the fun.

These cookies are very simple.
The maple syrup gives them a gentle sweetness, and the dough is easy to handle, which makes it perfect for baking with kids.

Ingredients (Cookies)

  • 60 g cake flour
  • 60 g oat flour
  • 5 g cocoa powder
  • 40 g maple syrup
  • 40 g rice oil
  • Pinch of salt

Mix all cookie ingredients in a bowl.
Roll out the dough, cut into shapes, and bake at 170°C (340°F) for about 15 minutes.

Usually, I don’t add any topping.
But this time, since it’s Valentine’s, we made a quick chocolate topping too. You just mix everything together.

Chocolate Topping (Optional)

  • 25 g coconut oil
  • 20 g maple syrup
  • 10 g cocoa powder
  • Pinch of salt (optional)

Mix all ingredients together and spread or drizzle over the cooled cookies.
Since it’s made with coconut oil, it melts from the warmth of your fingers.
So yes… little hands got very chocolatey and messy. But that’s okay. That’s part of baking together.

I wonder how many more times we’ll make cookies side by side like this.
